Amelia Island Restaurant Week - Farm to Table Rebirth Dinner

Raise a glass and celebrate the beginning of a new year and the finale of the Amelia Island Restaurant Week with a Farm to Table Rebirth Dinner at Omni Amelia Island Plantation Resort. Drawing inspiration from The Sprouting Project and its resident chickens, Executive Chef Todd Ruiz will craft a five-course dinner with unique dishes using our eggs as the showcased ingredient. 

This one-of-a-kind epicurean experience will combine the expertise of the entire culinary team at the Omni Amelia Island Plantation Resort with the elegance of its breathtaking location.

First Course

Quail: scotch egg + beet + walnut + smoke + cress

Second Course

Chicken: pork belly + soy + scallion + radish + nori + sesame + kombu broth

Third Course:

Duck: sprouting project caesar + tableside yolk dressing + anchovy croutons + black garlic 

Fourth Course:

Emu: scramble + sweet bread + osso buco + truffle + brioche + chive 

Dessert:

Brown Chicken Egg: brûlée + guava + pâte à choux + caramélia + cocoa nibs
