The Post-COVID Consumer: What's Top of Mind for Them

As COVID-19 took hold in the U.S. a little less than a year ago, consumers were facing empty store shelves and back-logged grocery delivery and hearing about milk being dumped and livestock being euthanized while food banks struggled to meet demand and worker safety concerns mounted at meat processing plants. A food system that faced skepticism before the pandemic is now under increased scrutiny after it scrambled to navigate a disrupted supply chain and unanticipated ripple effects. Roxi Beck with the Center for Food Integrity will moderate a panel of food supply chain experts who will discuss where we go from here to address consumers’ concerns and their post-pandemic priorities.

An active speaker, trainer, facilitator and a trusted advisor to food system thought leaders, Roxi Beck helps audiences think differently about earning trust. As consumer engagement director with the Center for Food Integrity, Beck brings more than 15 years’ experience working with clients across the food system, directing strategy and activities for consumer-facing food and agriculture initiatives. Whether working with farmers, registered dietitians, toxicologists, corporate executives, communication directors, restaurateurs, non-profit leaders, even consumers, Beck connects the dots on the varied pressure points that shape today’s food system, and helps organizations incorporate transparency principles and trust-growing approaches into their culture. She serves on the board for Iowa State University’s Agricultural Entrepreneurship Initiative, is a graduate of the Greater Des Moines Leadership Institute and is past-president of the National Agri-Marketing Association’s Iowa Chapter. Most importantly, Roxi has the work ethic and pride in agriculture gained from playing an active role in her family’s dairy farm in Minnesota.

Martha Hilton

Martha is the Vice President of Produce and Floral for Wegmans Food Markets. She is a graduate of Cornell University with a degree in Agriculture Business and has spent the last 12 years working in the retail space for Wegmans Food Markets. While working for Wegmans, Martha has had the opportunity to be part of many aspects of the business including merchandising and operations as a store manager. Martha is a graduate of the United Fresh Class 25, a LEAD NY Graduate and the current president of the Ontario County, NY Farm Bureau.

Jarrod Gillig serves as Business Operations and Supply Chain president for Cargill’s North American protein business. In his role, he oversees 40 protein production facilities across Canada and the United States. Gillig has more than 22 years of experience with Cargill, during which he has held numerous positions across beef processing, including plant management.

Jarrod is passionate about empowering youth to participate in agriculture and is actively involved in 4-H. He and his family show Hereford cattle.
