Apple and bramble crumble

A simple yet delicious pudding for using up those gluts of autumn fruit.

Ingredients

Crumble topping

240g plain flour
120g caster sugar
120g unsalted butter
60g oats

Fruity filling

600g apples
You can add other fruit you may need to use up e.g. pears, plums, berries
230g brambles (or blackberries)
60g unsalted butter
60g demerara sugar
1 tsp ground cinnamon
2 tsp all spice

Recipe

  1. Heat oven to 190°C.

  2. Crumble topping: Tip the flour and sugar into a large bowl. Add the butter and rub into the flour using your fingertips to make a light breadcrumb texture.

  3. Crumble topping: Do not overwork it or the crumble will become heavy. Gently mix in the oats and set aside.

  4. Fruity filling: Peel, core and cut the apples into small wedges and place in ovenproof dish. Add the brambles, placing them evenly between the apples. Sprinkle with all spice, cinnamon and sugar. Bake in the oven for 5 minutes.

  5. Remove from oven and sprinkle crumble mixture on top. Place back in the oven and cook for 20-25 minutes

  6. Remember to freeze any portions you don’t eat this time to save them from going in the bin. A great time saver for a simple meal another day when you may be busy.

    Defrost your frozen portions in the fridge and use within 24 hours, or in a microwave on 'defrost' directly before use.
