To achieve a crispy exterior, set the waffle iron to high heat. If you want a stronger Earl Grey flavor to come through, we recommend using Stash Double Bergamot Earl Grey (available in loose leaf and tea bag) instead.

Ingredients

1 tablespoon Stash Earl Grey loose leaf OR 2 tea bags of the same flavor
1/4 cup (or 4 tablespoons) butter
1 cup whole milk
1 teaspoon pure vanilla extract
1 tablespoon honey
1 1/4 cup all-purpose flour, sifted
2 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons raw sugar
1 egg, separated

Directions

In a sauce pot on low heat, add the butter, milk, vanilla, honey, and Stash Earl Grey tea leaves. (If you're using tea bag tea, cut open the tea bag and pour in the leaves.) Simmer for 5 minutes. Strain and let cool to room temperature.

In a mixing bowl, add your sifted flour, baking powder, salt, and sugar. Add egg yolk followed by the Earl Grey mixture. Stir until combined, leaving the batter a bit lumpy.

Beat egg white to a medium peak and gently fold into the batter.

Heat waffle iron to high and cook until golden.

Serve with powdered sugar, honey, whipped cream, and a cup of tea!

Happy brunching!

“These just might be the best waffles to date. Since Stash Earl Grey is a strong flavored tea with a very distinctive taste, the flavors really came through,” said Marcella of Modest Marce, the recipe creator.
